Honey Roasted Butternut Squash Salad
4 pds. Butternut Squash, peeled, cut into 1 inch cubes
2 Tbsp. 692 Olive Herbs de Provence EVOO
2 Tbsp. local honey
1 ½ tsp. sea salt
½ tsp. pepper
½ tsp. cinnamon
¼ cup dried cranberries
¼ cup feta cheese
1 Tbsp. parsley, chopped
¼ cup chopped walnuts (roasting optional)
Drizzle 692 Olive Comice Pear White Balsamic
1. Preheat oven to 400 degrees.
2. Mix ingredients from squash through cinnamon in a large bowl
3. Arrange squash evenly on a greased baking pan
4. Roast in the preheated oven 10 minutes, then turn squash for even browning. Roast an additional 10 to 15 minutes or until squash is tender and lightly browned (mine took 45 mins total).
5. Remove from oven and cool in refrigerator for one hour.
6. Place chilled squash in a serving bowl and sprinkle with cranberries, feta and walnuts.
7. Top with chopped parsley and serve.

~ Fresh Cranberries (1 to 2 Cups) – Roast for 15 to 20 mins (less sugar)
~ Pears or Apples
