Company's Coming Chicken
1/3 cup 692 Olive Apricot White Vinegar
1/3 cup 692 Olive Extra Virgin Olive oil, any
1/2 cup apricot jam
1/3 cup capers, plus a little juice
1/2 cup Spanish Green Olives, drained and sliced
1/2 cup brown sugar, packed
1/2 cup white wine
1/3 cup fresh cilantro, chopped
5 cloves garlic, minced
2 tablespoons additional 692 Olive olive oil, any (same from above)
4 large chicken breasts, boneless and skinless
In a large bowl, combine all ingredients, except chicken and 2 Tbs. olive oil. Stir until sugar is dissolved and jam is mixed well and set aside. Preheat oven to 350 degrees. Season chicken with salt and pepper. Heat 2 Tbs. oil in a large skillet and brown chicken approx. 1 minute per side. Arrange chicken in single layer in 8 or 9-inch square baking dish. Pour mixture over chicken and bake 20-30 minutes or until done.
